We made flour tortillas last night - from sourdough discard. Economic and environmental adding to this fascinating history. Very interesting post!

Very interesting and I don't doubt this at all as it makes total sense - but do you have some academic/state/historical sources on this 'migration'?

Hi Donny, I had the opportunity to do a HDip on the History and Evolution of Mexican Gastronomy during the pandemic at Escuela de Gastronomía y Artes Mexicana (ESGAMEX) and we had tons of reading material, some of which informed the essay, if you are interested, I’m happy to share some sources. ESGAMEX professors were amazing sharing some out of print material materials digitalised, it was a fascinating two years!

Lily I would love anything you had to share! I want to be clear I don't mean to doubt, but as an anthropologist sometimes we hear stories that feel really solid and they are apocryphal. Thanks again.
