Hi Donny, I had the opportunity to do a HDip on the History and Evolution of Mexican Gastronomy during the pandemic at Escuela de Gastronomía y Artes Mexicana (ESGAMEX) and we had tons of reading material, some of which informed the essay, if you are interested, I’m happy to share some sources. ESGAMEX professors were amazing sharing some out of print material materials digitalised, it was a fascinating two years!
